In this unusual white wine, different grapes contribute in a very specific way to the blend. It is 57% Sauvignon Blanc, 20% Muscat Blanc, 19% Chardonnay and 4% Rousanne. The Sauvignon Blanc and Muscat Blanc provide the citrus notes and bright acidity while the Rousanne imparts a concentrated viscous mouthfeel and adds aromas of apricot and honey. The Chardonnay has the role of delivering minerality, tropical aromas and balance. All in all, a delightful wine.

What began as an MBA business plan for an assignment at Cal Poly evolved into the Amicus Cellars and X Winery. The students-turned-founders' objective was to create a winery that would make the most of new technologies, overlaid with traditional winemaking techniques, to lower production costs. The result would be fine wines of outstanding value (a niche the entrepreneurs had identified as "underserved" in biz speak). Thankfully for wine enthusiasts, the plan was both written and realized in 2000. Today, the winery is spread over three facilities in St. Helena, Napa and American Canyon, and that philosophy--high-quality wines in a super-premium category--hasn't wavered.
This wine will pair beautifully with your Thanksgiving turkey or with the leftovers. Be adventurous and try my Whole Roasted Turkey on the Cocorico with Citrus Rosemary Gray Salt. The citrus in the salt will bring out the best in the wine. Serve with your classic T-day accompaniments and my guess is once you've enjoyed this recipe, you'll be making it again soon!
