Languedoc-Roussillon is France’s most dynamic wine region and spans the Mediterranean coastline from the Spanish border in the southwest to Provence and the Rhône Valley in the east. The estate of Domaine Boudau is located about 30 miles from Spain in the Côtes du Roussillon, a smaller region within this vast district. Here, the cooling breezes of the Mediterranean Sea are essential to growing high-quality grapes. Sibling proprietors Véronique and Pierre Boudau gave up corporate jobs to take over the wine estate founded by their grandfather. Domaine Boudau makes several polished wines, all from grapes traditional to the region. This red blend comes from their best vineyard, Le Clos—a 57-acre site marked by dry winds, steep slopes and stony soils. The stressful conditions cause vines to produce just a few grapes, and their concentration is evident in this deeply flavored red.

The wine has a firmness that comes from the stony soils where it was grown, but its polished tannins and balance make it a more flexible food partner and a fine match for roast chicken, steak or lamb. You can’t go wrong with my Roasted Chicken Breast with Spice Rub and Grape Juice.
