The Languedoc-Roussillon is perhaps France’s most dynamic wine region. It produces great wine at superb values. This full-bodied, rich and velvety smooth wine has a palate profile that is typical of southern France–lots of dark berry fruits on the nose with notes of baked sugar and toast, and flavors of plum and blackberry with hints of chocolate and fennel.

The estate of Domaine Boudau is located about 30 miles from the Spanish border, in the Côtes du Roussillon, a smaller region within the vast Languedoc-Roussillon district. Sibling proprietors Véronique and Pierre Boudau gave up careers outside the wine industry in 1993 to take over the estate founded by their grandfather. Grenache is the most widely planted red grape in Roussillon and forms the backbone of this luscious wine. In warm climates such as this one, the grape produces ripe, thickly textured wines with firm tannins and some spice. With this bottling, the Syrah and Carignan grapes are blended with Grenache to help soften the latter’s tannins and to add plush red and blackberry flavors.
Because of its softer texture, this wine goes well with a variety of meats. Slow braises and stews of pork, beef, lamb and veal will provide their own silky texture to harmonize with the wine’s smooth mouthfeel and rich taste. Quick-cooking steaks and chops are another option; to highlight the wine’s fruit flavors, pair the dish with a fruit chutney. Or play to the wine's intense flavors and create a pan sauce to serve alongside.
