This inviting Chilean beauty displays a nose of citrus and tropical fruit, followed by notes of peach and white flowers on the palate. The full character of the cool Casablanca appellation is demonstrated by the balance of freshness, flavor and acidity.

Wines like this gooseberry-zippy, herbal white are the reason why Chile’s ocean-cooled Casablanca Valley has become a go-to zone for Sauvignon Blanc. Built in 1999, the William Cole winery is architecturally reminiscent of old Chilean missions, similar to what you might find in the American southwest. Chile’s Casablanca Valley is spectacularly beautiful. The intensely cold waters of the nearby Pacific Ocean create cool foggy nights while clear, cloudless days are usual during the growing season. And every day, an afternoon breeze brings dry, clean air about the leaves of each plant to keep them free of damaging spores. The estate is comprised of 129 contiguous hectares and this Sauvignon Blanc is sourced from specific cooler micro-climates that William Cole claims enable the wine to retain a natural acidity.
Sauvignon Blanc and goat cheese are a classic match, and with its ripe flavors, the William Cole will be fantastic with nearly any light dish incorporating this tangy cheese. Serve the wine as an aperitif with dried apricots topped with a little chèvre, or pour it alongside a warm goat cheese salad. For more substantial fare, look to fish and shellfish. The wine’s fruity palate suggests flavorings like a fruit salsa, although fresh herbs also work well with Sauvignon Blanc. Feel free to add a little heat to the food; this white’s crisp acidity will help it stand up to spicier fare.
