The owners of Vinum say that this wine is "made for the open-minded, the adventurous and those who root for the underdog." It's all Cabernet Franc from El Dorado, California aged in used French oak for 22 months. Notice the beautiful crimson color with a purple robe. The seductive nose brims with cherries, plums, cedar, violets and graphite. This juicy, silky wine delivers flavors of black raspberries, blackberries, kirsch and chocolate. It's a balanced wine with bright acidity and lively mouth-coating tannins.

Vinum cellars is a collaboration of winemakers Chris Condos and Richard Bruno, who first became friends while they were Enology students at UC Davis. Chris Condos grew up in a large Greek family; both his grandfathers made wine and his father sells wine, so he decided to do both. Richard Bruno has worked for various wineries from Santa Cruz to Napa Valley and is still director of winemaking at Sebastiani & Sons. Condos and Bruno work with great grape growers to develop the best fruit in the vineyard. They are committed to experimenting and learning new winemaking methods while preserving an old world approach.
Given the rich blackberry fruit and dark chocolate nuances in the wine, my recipe for Seared Pork Tenderloin with Cocoa Spice Rub will make for an excellent pairing. The chocolate and spice combination sounds a little daring, but trust me, you are going to be using this spice mixture more than once.
A "scrapper" is a fierce competitor and this wine takes on all comers.
