The grapes for Two Angels come exclusively from Lake County's Shannon Ridge Ranch vineyards, which boast extremely volcanic, red pumice stone terroir. Hugging the mountain rims along the east edge of the new High Valley AVA at close to 2,200 feet, the area is reminiscent of the Rhône Valley's Crozes-Hermitage vineyards. From the top of the steep, north-facing slopes of the Sauvignon Blanc vines, there is a commanding view of California's largest natural lake, Clear Lake. While the vines bask in warm sunshine most of the day, the cooling westerly winds off the lake lower temperatures significantly, creating ideal growing conditions. Two Angels wines are crafted by second-generation winemaker Robert Pepi Jr., who sources the grapes primarily from high-altitude vineyards that have leaner soils and produce lower yields but more concentrated fruit. He makes Sauvignon Blanc, Petite Sirah, Syrah and Cabernet Sauvignon.

Light enough to enjoy on its own, this Sauvignon Blanc carries the intensity and bright acidity that will make it pair well with dishes that might obliterate the flavors of many wines, such as salads, ceviches and spicy Asian fare. Fish, shellfish and other dishes that are enhanced by a squeeze of lemon are great matches for this wine. Fresh parsley, cilantro or tender greens will emphasize the wine's herbaceousness.

The Two Angels will work well with my simple recipe for Chicken Salad with Fennel Spice. When making the salad, I like to shred the meat by hand, combine it with celery heart and red onion, and dress the mixture liberally with my best olive oil, lemon juice, and--the secret ingredient--Fennel Spice. Don't forget a crusty baguette!

The label art for Two Angels was created by Jacob de Backer in 1591, and the theme is the hilarity of inebreation and the trauma of the morning after. In other words, too much "ying" can result in too much "yang."
