The Three Saints is 80% Cabernet Sauvignon, 18% Cabernet Franc and 2% Merlot. Extraordinarily complex aromas of pipe tobacco, sandalwood and wild briar brush are freshened by blackberry and violet notes. On the palate, the wine is firm, fresh and striking. Blackberry fruit with notes of dark chocolate are framed by fine-grained tannins and a cleansing finish. This is a rich, supple wine with remarkable length.

Three Saints wines are a vivid expression of carefully selected grapes from the Dierberg Family's vineyards, which are located in three of Santa Barbara County's premium wine growing regions: Santa Maria Valley, Santa Rita Hills and Santa Ynez Valley. Dierberg traces his interest in wine back to his mother's family, who were vignerons in France. Following a successful career building a Missouri bank into 150 locations, Jim and his wife, Mary, spent ten years searching for the perfect California location to make wine. The breathtaking visual aspects of Star Lane Ranch and the potential for growing Bordeaux varietals convinced Jim and Mary that this eastern end of Santa Ynez Valley was the right place to grow premium grapes. Star Lane Vineyard, located at the far eastern end of the Santa Ynez Valley, is both the warmest and the highest elevation vineyard in the new Happy Canyon appellation of Santa Barbara.
This wine is rich and delightful on its own but is also worthy of a recipe like my Pan Roast Lamb Chops with Fennel Spice. The fennel spice in the recipe really brings all the flavor components together from wine to food and back to wine. Star Lane Ranch has served as a cattle ranch, a breeding ranch for famous race horses and has even served as a home for famous TV horses like Roy Roger's horse, Trigger. Clarence Kelly Johnson, who designed the famous U2 spy plane, among other spy planes, was the previous owner before the Dierbergs acquired the property in 1996.
