Knoll and Calistoga appellations. The blend is 90% Cabernet Sauvignon and 10% Merlot. Collectively,
Textbook 2010 showcases “NapaCab” power, albeit tempered enough to be great at the table. Red fruit,
spiced plum, camphor aromas and a hint of mint waft from the glass. Notions of tobacco and cedar
emerge with a swirl. Silky with smooth tannins with jammy, dark berry flavors, this wine delivers on the
Napa Valley promise.

Jonathan Pey enjoyed a career in the ultra-premium wine industry and has worked with some of the best–
Domaine Louis Jadot and Chateau de Pommard (Burgundy), Robert Mondavi and Sterling Vineyards (Napa
Valley) and Australia’s iconic Penfolds. Armed with a degree in agriculture and an MBA, he is now living out
a lifelong dream with his wife Susan and their three young daughters. Susan is a recognized leader in the
“service” side of the wine industry with extensive training and experience in California and Europe. In
addition to her role at the winery, she works as Wine Director for a large and prestigious restaurant group
based in the Bay area. Today she is one of the most prominent restaurant wine buyers in North America. As
a CCOF (Certified Organic winery), The Peys encourage environmentally friendly practices at many stages,
from conserving soils and water, managing pests and using a natural approach in winemaking.
This full-bodied Cabernet is made for red meat, be it smoked brisket or barbecued ribs. Or enjoy the wine
alongside a beef roast or grilled steak, and savor the last few sips with some after-dinner cheeses and crusty
bread. Stilton, Gorgonzola and other strong aged cheeses will stand up to the wine’s rich fruit and lush
palate.
The Peys call their Cabernet Sauvignon “Fin de Journée” (“at the close of the day”) to express when they most
