Rob and Diana Jensen left their jobs as Silicon Valley engineers to pursue their true passion: winemaking. What began as one barrel made in their garage has expanded to a full-scale winery using fruit from several vineyards spread throughout the Santa Cruz Mountains and California's Central Coast. They focus on Pinot Noir, Chardonnay and Syrah. Winemaker Bill Brosseau came on in 2000 and enjoys the challenge of using grapes from different vineyards. "Being able to understand our individual vineyards is vital," he says, and it's clear from the taste of the wine that he does understand each and every grape.
Sometimes I can't get away from the classics, and Chardonnay and roast chicken is certainly one of them. Try my new recipe for Pollo al Mattone. It's my take on the classic "chicken cooked under a brick" which takes me back to my childhood. Serve with a green salad and a crusty loaf of bread with a side of extra-virgin olive oil drizzled with a few drops of balsamic vinegar for dipping the bread.
"Testarossa" translates as "redhead" in Italian and was co-founder Rob Jensen's college nickname.
