Big, bold and beautiful! The Aussie Salute is a blend of spicy Shiraz, succulent Grenache, and a hint of aromatic Viognier—a feisty combination that works wonders on the palate. Rich, fragrant and inviting, this wine expresses blackberry, plum, currant and black pepper notes. Made with structure and grip, the vibrant, juicy length lingers with a “have another glass” finish.

Shoofly is known for its collection of robust, full-flavored wines crafted from handpicked vineyard sites that showcase true varietal pedigree. Winemaker Ben Riggs, a native of McLaren Vale, has been crafting some of the region’s top wines for a couple of decades. He’s known far and wide for his enviable roster of grape growers. South Australia’s Fleurieu Peninsula region produces soft, fruit-driven wines, with Shiraz, Grenache and Viognier all performing admirably. The Shiraz and Viognier juice in Shoofly’s Aussie Salute is co-fermented to aid integration. The final wine is matured in new and old American and French oak for eight months.
Lamb and beef pair especially well with Shiraz, whose intense flavors, plump texture and considerable tannins are well balanced by richly marbled steaks, roasts and chops. For seasonings, take inspiration from the wine’s pepper and spice notes, and play these up in a rub, marinade or sauce. The ripe fruit of the Shoofly will nicely complement sweet-and-savory accompaniments, such as roasted fruits (peaches, plums, apples), mild chutneys or sharp Cheddar. A pork roast with a crisp, crackling skin and lots of dried fruit in the stuffing, or lamb chops with tomato jam and fresh mint, would be superb as would our suggested recipe for Mary’s Oh Baby Back Ribs.
Shoofly is a nod to the ‘Aussie Salute:’ a casual flick of the wrist to shoo away the ever-present buzzing flies. Here’s to Aussie humor, wit and wine!
