Puttanesca Sauce
- 1 1/2 cups marinara sauce
- 1/4 cup clam juice (preferably unsalted)
- 2 tsp anchovy, chopped and smashed
- 2 tsp salted or canned capers, rinsed and chopped
- 1 tbsp finely chopped fresh oregano
- 2 tbsp finely chopped Italian flat leaf parsley
- 1 1/2 tsp red wine vinegar
- 1 1/2 tsp finely chopped hot chili peppers (oil packed from Italy)
- 2 tbsp extra virgin olive oil
- 1/2 cup Kalamata and Picoline olives, pitted and quartered
- 1/2 cup fresh tomatoes, peeled, seeded, and diced into half-inch pieces
- 12 ozs cooked penne or rigatoni
Cooking Time: 10 minutes
Whisk the marinara sauce and clam juice together. Add the remaining ingredients, except the pasta, and add additional seasoning to taste.
Just before serving, warm the sauce and toss with the hot pasta.
