Made from the local Xarel-lo grape used in Cava sparkling wines, the Calcari is a refreshing wine with aromas of Key Lime, citrus and spearmint. On the palate flavors of key lime and melon rind are joined by notes of pear and banana and a hint of stone-fruit piths.

Located near Barcelona, Parés Baltà is a family-owned winery in the Penedès region with traditions that go back to 1790. There are five separate estates growing 18 different grape varieties which produce a range of Cava sparkling wines and table wines. At 87, patriarch Joan Cusiné Hill is still involved with the vineyards while grandsons Joan and Josep Cusiné Carol run the business. Remarkably, their wives Maria Elena Jimenez and Marta Casas are the winemakers and oenologists, which make for an unusual level of family cooperation!
With its crisp flavors, minerality and light body, the Parés Baltà is great as an aperitif but will also be terrific with fish and shellfish entrées. Serve it with simple dishes like flaky white fish with butter and a squeeze of lemon, and its range of flavors will shine. Because of its acidity, the wine will stand up to spicy ingredients, too. Try it with ceviche of scallops or shrimp, which typically gets a little heat from fresh chili peppers. A really simple option is my recipe for Poached Shrimp.
Parés Baltà vineyards are certified organic. They raise their own flocks of sheep to produce fertilizer and have active beehive colonies to encourage pollination.
