The origins of the Cannonau grape are unknown, though the general belief is that the vine was probably bought from Spain in the 4th century and is actually Grenache. Locals Sardinians, however, will tell you the grape has been growing on the island since the Neolithic period. In 1950, Salvatore Pala began his adventure with wine amongst the rolling, vine-covered hills of Serdiana, an idyllic village located in southern Sardinia. Blessed with mild winters and warm, dry summers, this part of Italy's second-largest island is ideal for grape-growing. In 1995, Salvatore passed control of the winery operations to his sons, Enrico and Mario. Today he is still a source of advice and the guardian of the winery's historical heritage. Pala continues to be a family-owned winery where the value of tradition and modern techniques are both significant facets of the winemaking process. The name Triente comes from an ancient Sardinian coin that was found in one of the Pala vineyards.

For the Pala I think a little southern Italian inspired food is appropriate. My Salami Salad with Mozzarella and Tomato will do the wine justice. Think classic salad Caprese (tomato, mozzarella and basil) with salami tossed in. Make sure to have that crusty Italian bread there to soak up the juices in the salad!
