The Manifesto is a blend from two distinctive vineyards that the winemaker says "act as a kind of yin and yang together: abundant flavor in one and massive but defined flavor in the other." The 2008 Cabernet has bold, heady aromas of bramble, blackberry and wild strawberry. The aromas carry over into the mouth, where they are complemented by currants, blackberry, cigar-box tobacco and a touch of pencil lead shavings. All this is framed by a structure of harmonious acid and fine, seamless-but-pronounced tannin.

Manifesto was founded by Jamey Whetstone and Henri Gabriel, both avid surfers with a passion for wine. Jamey learned his trade at the iconic Turley Wine cellars, and Gabriel grew up with food and wine in his family's French restaurant. They teamed up with Peter Roy, the former president of Whole Foods Market and a leader in the natural and organics products industry, to make exceptional wine. Their philosophy includes making long-term commitments to their growers and paying top dollar. Above all, they put immense amounts of attention into the winemaking process, and it shows in the wines.
I don't normally think of hamburgers and Valentine's Day in the same thought, but this wine and my recipe pairing of Hamburgese Enorme with Truffle Manchego Potato is going to be an exception. I originally did the recipe on the first season of Top Chef Master's, but feel free to cut the recipe in half if is just the two of you. Truly decadent with the homemade truffle potato chips, I am sure you and your companion(s) will be swooning over the recipe and the pairing!
