The Le Morete is 70% Corvina, 20% Rondinella, 5% Molinara and 5% Cabernet Sauvignon. Aromas of roasted meats and dried plum are joined waft from the glass with notions of tar and spiced Mexican chocolate. On the palate, the wine is fruity and sweet with flavors of spiced plum, ripe raspberry and background shadings of cola and candy on the finish. The wine is fermented in stainless steel tanks and then re-fermented with the lees (skins and sediment of the semi-dried grapes used for Amarone. This age old technique is called ripasso, and it acts to add complexity and boldness.

Valpolicella is a viticultural zone of the province of Verona, Italy, east of Lake Garda. The red wine known as Valpolicella is typically made from three grape varietals: Corvina Veronese, Rondinella, and Molinara. Corvina, a dark-berried, thick-skinned variety, is the principal grape in red Valpolicella wines, forming the backbone of the blend with its firm tannins and rich, smoky, red-cherry scent. The area is best known for the celebrated Amarone wines whose method of production dates back to Roman times. The Manara Winery was established in 1950 by Lorenzo Manara and is now run by his three grandsons who have expanded the vineyards and thoroughly modernized all aspects of the winemaking process.
