This authentic Tuscan Chianti has dried cherry aromas and scents of burnt orange, tobacco, tar and saddle leather. Black fruit and sweet earth abound with notes of chocolate and spice. Decant for a couple of hours and you will be rewarded with notions of dried fruits. The palate is long and velvety, very full, generous and warm. The tannins are supple and well-integrated and the finish is lingering.

This wine comes from selected vineyards, average age between 12 and 15 years in the province of Siena. The area covers a stretch of gently undulating hills which have always been well-situated for producing quality grapes. The vineyards are planted with low-yield clones to get the best quality grapes. Picked by hand, the grapes are vinified following the traditional method under controlled temperatures to preserve the intense color and the wine’s primary aromas. The Luisi Chianti Riserva was aged for 12 months in Yugoslavian oak casks and then refined for a minimum of 3 months in the bottle before release.
This wine will work with lighter fare such as my Skirt Steak Saltimbocca, which is traditionally made with veal, although I have also seen it made with pork, chicken and even with fish. The key is the prosciutto and sage, which both work wonderfully in conjunction with the beef in this recipe. Serve with my recipe for Calabrese Broad Beans and Roasted Potatoes and you have a true feast!
