The Les Hérétiques comes from 100-year-old Carignan and Syrah vines and is aromatic, hearty and densely colored. It shows aromas of wild plum and black raspberry with a long finish of dark fruits. The wine is bursting with ripe berry flavors and is complex, elegant and balanced but with an exuberant personality—the ideal bistro wine.

André Iché inherited an impressive 13th century castle and a large estate in the barren Minervois region of the Languedoc in southern France. Not content to just sell his grapes to bulk wine producers, he was one of the first “vignerons” in the Languedoc area to break away from the local coop and develop his own distinct wines. Over three decades, he accumulated fabulous sites, often bought for a symbolic franc, which he converted into great vineyards. For years André was the only independent winemaker in Oupia; all his neighbors sold their wine to a coop and received pennies per liter. He pioneered the Minervois AOC (appellation) in 1973 and is credited with bringing improved quality standards to this ancient wine region. Thanks to people like André, today there are over two hundred independent producers making their own labels.
The Les Hérétiques is bold enough to pair with roasted pork or chicken skewers, but I especially like this Languedoc red with my Seared Pork Tenderloin with Cocoa Spice Rub. The rich fruit flavor profile in the wine will bring out the best in the cocoa and sweet spiced coated pork. The chocolate and spice combination sounds a little daring, but trust me, you are going to be using this spice mixture more than once.
André Iché died in 1997 but is still known locally as the eternal twenty-year-old.
