There's an inviting nose on this wine of black fruits, cassis, toasty oak and chocolate and even a hint of tar. The entry is full and round with flavors of black currant, boysenberry and cedar with a hint of vanilla. This is a powerful yet balanced wine with integrated oak and a long finish. A classic Napa Valley Cabernet Sauvignon.

JAQK Cellars is the creation of three people--Craig MacLean, Katie Jain and Joel Templin--and an idea: do what you love. For Craig, there's nothing he'd rather be doing than walking through vineyards, crumbling clumps of soil in his hands, smelling the air, understanding a particular harvest, and crafting a wine that's wonderfully delicious. He earned two degrees in enology from UC Davis and has made wine for some of Napa's biggest names. Katie and Joel share Craig's passion for wine, but their first love is the world of graphic design. They bring their unique creativity to every bottle design so that each delivers a pleasing experience before the first sip is taken.
My recipe for Cowboy Steaks on the Grill will work beautifully with the JAQK, especially if you include another all American favorite, my recipe for Definitive Mashed Potatoes. Rubbing gray salt into the steaks before grilling makes all the difference. The gray salt I use, from Brittany's coast, retains all the minerals found in the sea, echoing your body's mineral content exactly. Because of its taste, I use gray salt exclusively and cherish the natural flavors it highlights in all foods.
JAQK Cellars is focused on making great, wine but some customers find the label designs so decorative they can't throw away the bottle. The flagship wine, called "High Roller," is so attractive to some people they prefer to display the wine rather than open it.
