It’s so much fun to explore the world of Italian white varietals grown outside of Italy. This bright, juicy Cortese from California has a lovely texture and inviting flavors of underripe mango, orange blossom and nectarine with light mineral notes. Cortese is primarily grown in northern Italy’s Piedmont region and the best known wines come from the municipality of Gavi where Cortese wines go by the same name.

Fatto a Mano makes small batches of single Italian varietal bottlings. Winemaker Jake Hawkes is the second generation of an Alexander Valley family of growers who were among the first to plant Cabernet Sauvignon in Sonoma back in 1971. Although the most popular varietals today are of French ancestry, historically California wine was rooted more in Italian varietals. Jake sources his grapes from several original Italian immigrant planted vineyards and embraces not only these heritage vines but also the traditions behind the winemaking. All Fatto a Mano wines are fermented in small, open-top containers, punched down by hand and bottled without fining or filtration. Jake says, “To hell with perfection. I want to make wines that are interesting.”
Zesty enough to enjoy on its own, the Fatto a Mano has the structure to stand up to a wide range of lightto medium-bodied fare—from shellfish and flaky white fish to salads, herbed pastas and light chicken, turkey or pork dishes. And unlike many whites, this one can handle a bit of spice or heat. We love it with main-dish salads of chilled shrimp or chicken, especially with fruity (grape, mango, peach) or Asian accents. My Angry Shrimp with Citrus-Spinach Salad will do the trick.
