The Silvaner grape is primarily found in Alsace and Germany, where under skilled winemaking, it can deliver a true expression of terroir. The Dr. Heyden reveals pleasing aromas of white flowers, green banana and honeysuckle. Keep swirling, and you might pick up notions of orange zest, yellow plum and almond. This is a clean, refreshing wine with lively fruit flavors and good length—a well made, satisfying package.

It is difficult to generalize about the region because of the extraordinary diversity of the vineyards and the wines they produce. The Gothic town of Oppenheim is known for superior wine, and the family-owned Heyden winery is a popular attraction. Founded in 1999 by Dr. Karl Heyden, who won the German oenologist prize in 2004, the winery is now run by his son Frank, who graduated from the esteemed Geisebheim Institute. After making a swift mark on the German wine scene, Dr. Heyden died in 2005, leaving his family to build on his achievements.
Peach season is just coming into full swing, and what could be more perfect than some warm peaches with an Italian favorite, Prosciutto di Parma. Fortunately, my Warm Peach and Prosciutto Salad fits the bill and is a superb partner for the Dr. Heyden.
Underneath the city of Oppenheim, the houses and buildings are connected by an incomparable labyrinth of underground passageways, which are for the most part historically preserved and still used today.
