Wedged between the Mediterranean Sea, the Pyrenees Mountains and the northeast border of Spain, Roussillon is the sunniest place in all of France, with an average of 325 clear days each year. Domaine de la Chique was, for many years, the largest olive grove in France, planted in 1960. Its 71-acre vineyard lies right in the center of the olive plantation and features mostly old-vine Grenache and Carignan on gravelly clay and limestone soils. The vineyard was nearly uprooted in 2007 but was saved thanks to the efforts of Hervé Bizeul, the owner of nearby Clos des Fées, who took over its management. Considered one of the region’s most talented winemakers, Bizeul has crafted this blend into a beautiful wine that shows what’s possible when concentrated, intensely flavored fruit from older vines in poor rocky soils is coupled with modern winemaking techniques that preserve the fruit while mitigating tannins.

This blend is perfect for grilled red meats but will be quite at home with lamb, chicken, sausages and salami. It has a natural affinity for ingredients from the south of France such as tomatoes, onions and garlic.
