This French beauty is 60% Syrah, 19% Grenache, 10% Carignan, and 11% Cinsault. It has aromas of black plum and black current and wonderful scents of the Languedoc countryside--bramble, conifer and lavender. There's rich, black fruit on the palate that speaks to the hot Mediterranean summers and notions of rosemary, thyme and menthol.

St. Chinian wines have a very long-standing reputation, going back as far as the fourteenth century but the appellation only received AOC status in 1982. But the wine region of St. Chinian is more than one small town: it is actually twenty villages and one appellation. The wine district includes the plain of vines making up most of the wine area and the terraced vineyards climbing up from the rivers into the high country of the Haut Languedoc, with awesome views towards the Mediterranean Sea. Family-owned Domaine de Gabelas is organically farmed and produces red blends and rosé.
Unusually versatile, this medium-bodied red makes a delicious accompaniment to hearty poultry dishes as well as pork and lean red meats. Take inspiration from the flavors of southwest France and pour the wine alongside chicken cooked with olives, rosemary and onions-- a good match for my Grilled Lamb Steaks with Herbs de Napa. Serve with a side of my Potatoes Da Delphina, a recipe I borrowed from a famous restaurant outside of Florence.
