The vines for this wine were planted in 1973, which is old for Napa because much of the valley has been replanted in the last 15 years. DeSante harvests the fruit ripe, but prevents the occurrence of malolactic fermentation (which creates the buttery, creamy flavors in some wines) to keep a bright, refreshing line of acidity and crisp minerality. Notice aromas of fresh pear and honeycomb that lead to hints of citrus zest and a chalky, mineral texture.

This wine is a labor of love for David and Katharine DeSante, a husband and wife winemaking team who bring years of expertise and an artful touch to every project they take up. After earning a master’s in oenology from the University of California, Davis, and working in as far flung places as Western Australia and Bordeaux (Château Lafite), David has made a name for himself in Napa as a hired winemaker for such vineyards as Tierra Roja, Jaffe and Source Napa. For years, David DeSante had his eyes on a parcel of oldvine Chardonnay in Jack Varozza’s vineyard in Napa Valley. Fortunately, after a few pleasant conversations, David convinced Jack to sell him some fruit in order to make this cherished old-vine Chardonnay.

This wine is at its best with simply prepared fish and chicken dishes, as it has the ability to hold its own flavor without interfering with the taste of the food. Because of its delicacy and crispness, it is also a natural with oysters and shellfish.
