Pop open this straightforward bubbly as a pre-dinner aperitif or to welcome guests to dinner—no birthday or anniversary required. It has lively bubbles, is a pale straw color flecked with green, and has aromas of white peach, honeysuckle, pineapple and pear blossom. It’s a party in a bottle with a refreshing mouthfeel and flavors of white peach and nectarine with notes of almond shell and jasmine.

Prosecco is a white grape that produces fine sparkling wine considered to be Italy’s finest, and one that is gaining traction in the United States. It tends to be a touch softer in texture than Champagne, and it’s certainly easier on the wallet. Italy’s Prosecco region produces millions of cases of sparkling wine each year, most of it from large cooperatives located in the plains that stretch from Treviso to Trieste. Casalnova is based near the town of Conegliano, which makes the region’s most structured and refined Prosecco. Crisp sparkling wines always come from cool climates, and some of Casalnova’s vineyards in the Alpine foothills are not harvested until late October or early November.

This sparkling wine pairs beautifully with breakfast fare like my Pita Eggs Benedict over Grilled Prosciutto and Olive Oil Hollandaise. It goes just as well with smoked or poached salmon, or with grilled freshwater fish or clam chowder.

In the late afternoon virtually every bar in Veneto pours countless glasses of Prosecco, which locals call an ombrette, or pick-me-up.
