The wine has a charming golden yellow color and great aromatics of tropical fruit with an essence of oyster shell. It's a full-bodied wine revealing moderate acidity and flavors of bright yellow fruits, white ginger, green apple, sage with hints of almonds and hazelnuts.

Cantine Torri, located on the banks of the Vibrata River, has been making distinguished wines from indigenous Abruzzo grapes since 1966. The Pecorino grape, long thought to have disappeared, was recently saved from the brink of extinction when a few vines were accidentally discovered growing wild in a canyon. Wineries like Cantine Torri take great pride in bringing a piece of Abruzzo's history back to life and are grateful for the opportunity to share their success beyond the region's borders.

Pecorino pairs terrifically with fish and shellfish but also works well with citrus and vegetables. Keeping that in mind, I paired it with my recipe for Fritto Misto with Two Mustard Sauces, a wonderful combination of fried calamari, lemons, fennel and onions. It is a classic Italian dish found in homes and restaurants in Italy and around the globe.

Pecorino is also the name of an Italian sheep's milk cheese originating from Sardinia but now made mostly in the Maremma region of southern Tuscany.
