For Sonoma’s cool, sun-drenched coastline, 2009 was a terrific vintage, offering Chardonnays as brisk and clean as sea air. Give the wine a little time in the glass, and aromas of lemon curd backed by toasty oak and orange peel emerge. This white has pure bright lemon and apple flavors, with notes of spicy vanilla and butterscotch adding a luxurious accent.

Calstar’s owner and winemaker, Rick Davis, is best known for finely wrought cool-climate wines from the Sonoma Coast, where he learned his trade at celebrated cellars like Flowers and Tandem. 2009 was an excellent vintage for his style, where a cool season led to a long, drawn-out ripening that resulted in wines of outstanding clarity, concentration and perfume. By the way, though Davis is a proud Californian, the brand’s name doesn’t refer to the state: it’s a combination of Callie and Star, the names of his two cats.
Chardonnay’s subtle flavors are easily overwhelmed by spicy and pungent foods, so serve the Calstar Chardonnay with mild preparations of shellfish, fish or white meats like chicken or veal. The wine’s plush texture will complement pâté or butter and cream sauces; its acidity will also cut the richness of these foods. To complement and not overpower the wine, try my Lemon-Baked Sea Bass with Spinach Salad. The citrus attributes in the wine will work wonderfully alongside the fragrant lemon and sweet spinach in this simple yet elegant dish.
