The Campo de Borja region in Aragon has only 17 wineries, even though documentation from the local Cistercian monastery dates winemaking to the 12th century. Located on the southeastern boundary of Rioja, Campo de Borja's continental climate comes with a unique twist, the cierzo wind that blows cold, dry air down from the northwest. As you would expect, summers are very hot and winters are cold. Temperatures can vary widely and the region doesn't get much rain, which means the vines fight hard to produce fruit. The area is all about red wine particularly Garnacha. Indeed the DO's slogan is "Empire of Garnacha."

This intriguing Garnacha has fascinating blue fruit aromatics and a full supporting cast of black fruit on the palate. Couple this with delightful spice notes and my recipe for Planked Salmon with Honey Balsamic Glaze comes to mind. The sweetness from the honey, the richness from the balsamic vinegar and the smoky attributes from the grill will work into a miraculous pairing.
