The Beltrame Rebus is a fascinating blend of grapes with a combination of flavors that gets you thinking. The nose is bursting with red fruit aromas and savory scents. Keep searching, and notions of dried roses and lavender may reveal themselves. Flavors of dried plums and dried cherries are enhanced with nuances of mushrooms and cola nut. This is a complex wine that could only be Italian, and it deserves a good meal to make it shine.

Young Italian winemaker Christian Beltrame teamed up with his grandfather and found the perfect vineyard and cellar near the ancient lagoon city of Aquileia to re-establish the family winemaking history but with a twist. Previous generations had only made wine for themselves and not for the market. Set in the heart of the Friuli DOC wine region, Cabernet Franc is actually the dominant red wine produced. The Rebus is Christian’s secret blend the exact contents of which he is unwilling to divulge.
When I tasted this wine, I knew it called out for either good country cooking with sausage and peppers or an upscale version of the same idea, like my recipe for Grilled Pork Chops with Peck Seasoning and Charred Peppers. Peck is an exquisite food emporium in Milan, and this mixture is an interpretation of the most popular seasoning in the Peck kitchen. This wine is also divine with cheese. Try it with Pecorino, a sheep’s milk formaggio from Pienza, just down the winding road from Montalcino in Tuscany. For maximum impact, try aPecorino that’s studded with black peppercorns or truffles!
Aquileia is a World Heritage Site, where the real museum is the whole town!
