Parts of Carneros are cool enough to make exceptional Pinot Noir. The winemaker says, “Imagine standing in a red raspberry patch drinking a vanilla, clove, rose bud tea—that’s the nose.” The palate has an earthy note with red fruit flavors bursting through with hints of dentine spice and orange zest. The body is supple and full and loaded with juiciness.

Some people are lucky enough to find their true passion early in life. Virginia native Nicole Abiouness discovered shortly after college that her passion was not academics but food and wine. She decided to attend the Culinary Institute of America in Napa Valley—known as the “Harvard of cooking schools”— where she found herself taking every wine class she could. Internships and apprenticeships led her from Napa to Australia, Bordeaux and Burgundy, until she found herself back in California with the opportunity to make wine under her own label. She jumped at the chance, and thus the winery, which focuses on Pinot Noir and Sangiovese, was born.
The Abiouness pairs well with rich, hearty fare such as roasts and chops served with creamy risottos and aged cheeses. The wine’s acidity will cut the richness of these foods, whose proteins will in turn tame the wine’s tannins. For accent flavors, choose earthy ingredients like canned or fresh tomatoes and fresh or dried herbs.
When Nicole Abiouness was still working as cellar master at Luna Vineyards with her first batch of grapes in barrels aging beautifully, she heard about 10 rows of old-vine Pinot Noir from Carneros that were up for sale. And so the adventure began.
