The A Côté is a bold, concentrated red wine with flashy aromas of red fruit, cassis, celery salt and fennel. It's 60% Cabernet Sauvignon, with 40% Merlot adding structure to the Cabernet's fleshy body. Lush plum, pomegranate and cranberry fruit flavors gather intensity, supported by wonderfully integrated tannins. Pleasant notes of menthol and a gentle kiss of French oak round out the palate.

Santa Barbara Highlands' sudden rise to fame has transformed the formerly sleepy rural region into a destination for those who love wine and the wine-country lifestyle. Joshua Klapper, who followed his passion for the region's wines all the way from Las Vegas to Santa Barbara's now-renowned vineyards, is one such newcomer. He's a long way from the glitz of five-star restaurants, but the former top sommelier has no regrets. In founding A Côté, Klapper saw an opportunity to create a new wine company based on the model of top Burgundian négociants (wine merchants), who rely on impeccable palates and a gift for blending to create wines of pedigree, balance and typicity. Produced from prized grapes from two ideally located vineyards, this rare wine was made in a tiny quantity.

This is pure comfort food at its finest and perfect at this time of the year when family and friends are all gathering. The braised short ribs are even better when made the day ahead. Serve with a side of my Soft Polenta and I can guarantee all of your guests will be swooning with delight.
